Butcher facts
Las Vegas butcher shops, compared
Seven Las Vegas butcher shops compared from their own sites, grouped by area: what each stocks (Prime, Wagyu, dry-aged, grass-fed), where and when.

A good butcher is the shortcut to a steakhouse-quality steak at home: you can ask for the grade, the thickness and the aging. Here are seven Las Vegas butcher shops, with hours and specialties copied from each one’s own site on November 1, 2026. Looking for a carnicería, a halal counter or an international market instead? See our carnicerías and halal meat markets guide.
Short answer: For Wagyu and USDA Prime, The Butcher Block or The Butcher House. For ranch-direct grass-fed beef in the southwest valley, Diamond Spur. For whole-animal, pasture-raised meat, Featherblade. For a butcher counter inside a steakhouse, Echo & Rig at Tivoli Village. For a meat market with a barbecue grill next door, John Mull’s.

Butcher shops by area
- Southwest and Spring Valley: Diamond Spur (S Fort Apache Rd, near Rhodes Ranch), The Butcher Block (Rainbow), The Butcher House (W Flamingo Rd), Featherblade’s Fort Apache shop and Lemon Tree Cafe & Market (S Buffalo Dr).
- Summerlin and the west side: Echo & Rig at Tivoli Village and Featherblade on W Charleston Blvd. The Butcher Block also lists a Durango location.
- Northwest: John Mull’s Meats on Thom Blvd and Featherblade on Norman Rockwell Ln.
- Henderson: The Butcher Block’s Henderson shop. Eastern Market, the Armenian and Eastern European deli on E Windmill Ln in Henderson, has no butcher case of its own but a big deli; it’s in our carnicerías and halal guide.
- Downtown and the east side: we didn’t find an independent butcher shop here whose own site we could check. The closest options are the carnicería counters at Mariana’s Supermarkets and the halal counter at Sidra Market, both in the carnicerías and halal guide.
Grade and aging, in one minute
USDA Prime is the top grade for marbling, then Choice, then Select. “Dry-aged” means the beef was held uncovered in a controlled cooler to concentrate flavor and tenderize it. Our USDA beef grades guide explains the grades and the safe cooking temperatures.
What locals say online
In an r/vegaslocals thread asking for the best butcher, one commenter noted that Echo & Rig has two Las Vegas-area restaurants with butcher counters and said the processing happens at the northern one. Echo & Rig’s own site now points to its Tivoli Village flagship for the butcher shop. That’s one poster’s account, summarized from a search result.
About Diamond Spur
Diamond Spur Butcher Shop & Deli was started by chef Marc Marrone and hospitality veteran Todd Lunger. Its site says the beef comes from Audubon-certified regenerative ranches it runs with a ranch partner, with no feedlots, hormones or antibiotics. The butcher case sits next to a neighborhood deli that the owners compare to the markets on the Bronx’s Arthur Avenue, and the shop takes custom cuts and special orders. Those are the shop’s own descriptions; we haven’t visited yet.
Before you go
Butcher hours change around holidays, and specialty cuts often need a day or two of notice. Call ahead for Wagyu, large roasts or custom aging. If you’d rather someone else do the cooking, see our off-Strip steakhouse comparison.
